Americans Dissatisfied with Restaurants’ Healthy Choices

In 2006, 34 percent of adults indicated it is important for restaurants to offer health-conscious menu items -- up from 28 percent in 2005, according to a national survey conducted by ARAMARK. However, only 14 percent indicate they are very satisfied with the healthy options offered by restaurants.

Seize the Sales Opportunity

Despite the growing interest in healthier eating, people still want tasty food and value for their dollar.

To meet consumer expectations, food innovators put nuts on the menu. In 2004, 26 of the top 50 trend-setting restaurants followed by Food Beats Inc. incorporated hazelnuts into their menus. They add a rich, flavorful accent to both sweet and savory dishes.

Don’t Sacrifice Flavor: Obesity is on the rise and heath and nutrition authorities are emphasizing the importance of dining out wisely. When every ingredient counts, hazelnuts are preferred. They taste every bit as exotic and decadent as less healthy options, plus hazelnuts are an excellent source of vitamin E and contain antioxidants.

A Few Ideas:

  • Swap out battered fried-fish for a baked hazelnut-encrusted coating.
  • Sprinkle on salad to replace buttery croutons.
  • Use hazelnuts to help emulsify salad dressings.
Expect Specific Consumer Requests: As consumers take charge of their eating habits, be ready to accommodate healthier requests. Hazelnuts can be substituted for virtually all other nuts, adding healthful, tempting variety to your menu.

Understand Consumer Nutrition Behavior

  • 34% of Americans attempt to watch their weight -- up from 29 percent in 2005.
  • 27% attempt to limit intake of trans fats -- up from 21 percent in 2005.
  • 46% feel strongly that restaurants should provide nutritional information on menu items.
